Forest Honey Cheese Crisps with Pumpkin Seeds

Ingredients

  • 150 g grated hard cheese (e.g. Gouda or Alpine cheese)
  • 1 tbsp forest honey
  • 40 g pumpkin seeds
  • 50 g flour
  • 1 tsp coarsely ground pepper
  • 1 pinch of salt
  • 1 tsp dried rosemary

Method

  1. Preheat the oven to 190°C (top/bottom heat) and line a baking tray with baking paper.
  2. Roughly chop the pumpkin seeds and mix with the grated cheese, flour, pepper, salt and rosemary.
  3. Gently warm the forest honey until runny, then fold into the cheese mixture.
  4. Using a spoon, place small, flat mounds spaced apart on the tray and press down slightly.
  5. Bake in the oven for 10 to 12 minutes, until the edges are golden brown and crisp.
  6. Let the crisps firm up briefly on the tray, then peel off the paper.
  7. Leave to cool completely – that's when they turn really crunchy.

Tip: Space the mounds well apart, as the cheese spreads out while baking and may otherwise stick together.
