Recipe with honey

Acacia Honey Lemon Cream in a Jar

Acacia honey is mild and runny and stirs in easily when cold, without overpowering the fresh lemon note. This keeps the cream light and well balanced.

Ingredients

  • 250 g quark (20 %)
  • 200 g cream
  • 3 tbsp acacia honey
  • 1 unwaxed lemon (juice and zest)

  2. Stir the quark with acacia honey, lemon zest, lemon juice and vanilla sugar until smooth.
  3. Whip the cream until stiff and gently fold it into the quark mixture.
  4. Roughly crumble the sponge fingers and drizzle lightly with the milk.
  5. Layer sponge crumbs and lemon cream alternately in four jars, finishing with cream.
  6. Chill for at least 1 hour so the cream can set and the flavours develop.
  7. Before serving, sprinkle with a little lemon zest if you like.
