Recipe with honey

Acacia Honey and Lemon Marinade for Fish

Acacia honey is mild and stays runny, so it whisks easily with lemon and oil into a delicate marinade that does not overpower tender fish.

Acacia Honey and Lemon Marinade for Fish

Ingredients

  • 2 tbsp acacia honey
  • 1 unwaxed lemon (juice and zest)
  • 4 tbsp olive oil
  • 1 clove of garlic
  • 1 tsp Dijon mustard
  • 2 stalks of flat-leaf parsley
  • Salt
  • Pepper

Method

  1. Wash the lemon in hot water, finely grate the zest and squeeze the juice.
  2. Peel the garlic and finely chop or grate it.
  3. Whisk the acacia honey with the lemon juice and mustard; as the honey is runny, it dissolves easily.
  4. Gradually whisk in the olive oil until the marinade binds slightly.
  5. Stir in the lemon zest and garlic and season with salt and pepper.
  6. Finely chop the parsley and fold it in.
  7. Brush the fish fillets with it and leave to marinate in the fridge for at least 20 minutes, then fry or bake in the oven.
