Heather Honey Chocolate Mousse with Hazelnut Brittle
The bold, slightly bitter heather honey from SUMMSTOFF gives the dark chocolate mousse a deep, spicy note that works wonderfully with the crunchy brittle.
⏱ Preparation 25 min · Cooking/baking time 5 min · Total 30 min · 4 servings
Ingredients
- 150 g dark chocolate
- 3 tbsp heather honey from SUMMSTOFF
- 200 g cream
- 2 eggs
- 1 pinch of salt
- 40 g hazelnuts
- 2 tbsp sugar
Method
- Roughly chop the chocolate and melt it over a bain-marie, stir in 2 tbsp heather honey and leave to cool slightly.
- Separate the eggs. Stir the egg yolks into the lukewarm chocolate.
- Whisk the egg whites with a pinch of salt until stiff. Whip the cream separately until stiff.
- Fold in the cream first, then gently fold in the whisked egg whites.
- Spoon the mousse into jars and chill for at least 3 hours.
- For the brittle, roughly chop the hazelnuts, caramelise with sugar in a pan until golden brown, then leave to cool on baking paper.
- Before serving, drizzle the remaining heather honey over the mousse and sprinkle with the brittle.
