Linden Blossom Honey and Lemon Marinade for Chicken

Ingredients

  • 2 tbsp SUMMSTOFF linden blossom honey
  • 1 unwaxed lemon (zest and juice)
  • 4 tbsp olive oil
  • 2 cloves of garlic
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • freshly ground pepper
  • 800 g chicken thighs or breast

Method

  1. Wash the lemon in hot water, finely grate the zest and squeeze out the juice.
  2. Peel the garlic and grate finely or crush.
  3. Stir the linden blossom honey with the lemon juice until dissolved.
  4. Stir in the olive oil, lemon zest, garlic, thyme, salt and pepper.
  5. Turn the chicken in the marinade and leave covered in a cool place for at least 1 hour.
  6. Drain briefly before frying or grilling, taking care not to overheat the marinade so the honey does not burn.
