Spring Blossom Honey Apple Chips with Cinnamon

Ingredients

  • 3 firm apples (approx. 500 g, e.g. Elstar)
  • 2 tbsp spring blossom honey from SUMMSTOFF
  • 2 tbsp water
  • 1 tsp ground cinnamon
  • Juice of half a lemon

Method

  1. Preheat the oven to 90 °C conventional (top/bottom heat) and line two baking trays with baking paper.
  2. Wash the apples, leave the cores in and cut into slices about 2–3 mm thin with a sharp knife or mandoline.
  3. Stir the lemon juice, water and spring blossom honey in a bowl until the honey has dissolved.
  4. Briefly dip the apple slices in the honey mixture, let them drain and lay them side by side on the trays.
  5. Lightly sprinkle the slices with cinnamon.
  6. Dry in the oven for about 2 hours, swapping the trays and turning the slices halfway through.
  7. When the chips are dry but still slightly flexible, take them out of the oven and let them cool completely on a rack – they will turn crisp as they do.

Tip: After cooling, leave the chips uncovered for half an hour before putting them in a jar – this keeps them crisp for longer.
