Winter Salad with Chicory and Heather Honey Dressing
Heather honey is strong and tangy and brings depth to a dressing that balances the slight bitterness of chicory well.
⏱ Prep 20 min · 4 servings
Ingredients
- 3 heads of chicory
- 2 handfuls of lamb's lettuce (approx. 80 g)
- 1 tart apple
- 50 g walnut kernels
- 2 tbsp heather honey
- 2 tbsp apple cider vinegar
- 4 tbsp rapeseed oil
- 1 tsp medium-hot mustard
- Salt
- Pepper
Method
- Trim the chicory, cut out the stalk in a wedge shape and cut the leaves into bite-sized pieces.
- Pick over the lamb's lettuce, wash it and spin it dry.
- Wash the apple, quarter it, core it and cut into thin wedges.
- Briefly toast the walnut kernels in a dry pan without fat until fragrant, then roughly chop.
- For the dressing, whisk the heather honey with the apple cider vinegar and mustard; as heather honey is jelly-like, whisk vigorously.
- Slowly whisk in the rapeseed oil and season with salt and pepper.
- Mix the chicory, lamb's lettuce and apple in a bowl, pour over the dressing and toss gently.
- Sprinkle with the toasted walnuts and serve immediately.

Tip: Cut the apple only just before serving so that it does not go brown. A squeeze of lemon helps too.
