Recipe with honey
Winter Salad with Chicory and Linden Blossom Dressing
The fresh, slightly minty linden blossom honey balances the delicate bitterness of the chicory. This turns a tart winter vegetable into a well-balanced salad.

Ingredients
- 3 heads of chicory
- 2 apples (e.g. Elstar)
- 60 g walnut kernels
- 100 g lamb's lettuce
- 2 tbsp linden blossom honey
- 3 tbsp apple cider vinegar
- 5 tbsp walnut oil

- Core the apples and cut into thin wedges.
- Wash the lamb's lettuce and drain well.
- Roast the walnut kernels in a dry pan without fat for about 3 minutes and chop roughly.
- For the dressing, whisk together the linden blossom honey, apple cider vinegar, mustard, salt and pepper, then beat in the walnut oil.
